Cheese Enchiladas Recipes
These of course are not very healthy for you, but they do taste delicious. They are prefect for the vegetarians such as myself, but hamburger can easily be added for the meat eaters in the house.
- 1 can mild cheddar cheese dip
- 1-2 8 oz. packages shredded mexican cheese
- 2-3 cups diced onion (optional)
- 20-30 corn shells
- oil (to fry the shells)
Fry all shells and pat dry. Preheat oven to 375 degrees. Get a 3 quart casserole dish to place the enchiladas into when finished. Take a corn shell and spread a tablespoon of cheese dip down the middle, add a tablespoon of shredded cheese and onions (if desired). Roll the corn shell up and place into casserole dish. Repeat the same thing for every other shell. Once you have your pan filled, top all of your enchiladas with shredded cheese. Place into the oven and bake for about 10 minutes or until cheese is completely melted.
